In 1996, the same year he started college, chef Ariel joined the staff at Augusto’s (formerly known as Alioli by Chef Alfredo Ayala), the restaurant housed in the same location where Restaurante Ariel is currently located.
After graduating from the University of Puerto Rico in Río Piedras with a Bachelor’s Degree in Economics in 2000, he left to attend the Culinary Institute of America in New York.
In 2002, he came back to Augusto’s, this time as his sous chef.
Coming back to Augusto’s was familiar and meaningful for chef Ariel, as he had already developed a very special friendship with Chef Augusto Schreiner. After having worked with Augusto for so long (even spending summer and winter breaks at the restaurant), honing his skills in his kitchen was the perfect thing to do.
Later, in 2005, and after 17 years at the helm of his restaurant, chef Augusto sold the restaurant to chef Ariel Rodriguez. Chef Ariel decided to keep the restaurant’s name, Augusto’s, until 2017 when the restaurant was remodeled. A minimalist atmosphere dominates Ariel and his culinary style is defined as "author". Chef Ariel prepares a creative and meaningful menu, where he uses products from all over the world including the local harvest, because in addition to freshness, he likes to encourage agriculture in the country.
